Upon completing culinary school, I was hired by a German company to be a chef on board one of their two private ships. I spent the next two years traveling throughout Europe, North Africa, Caribbean, and South America. During my two years on the ship, I visited 18 different countries and enjoyed learning as much about the culture, food, and the languages of those countries.
In 1984 I moved to the USA to begin working on my college degree. While attending a small private college in the mountains of western North Carolina (Montreat College), I also worked as a Banquet Chef at the Grove Park Inn, Asheville, NC. After graduating with a bachelor’s degree in Intercultural Studies, I moved to South Carolina and attended Columbia International University and University of South Carolina receiving my Masters degree in Intercultural Studies in 1991.
Missing the restaurant business, I returned to my hospitality roots working for two contract management companies from 1992 thru 2000 in the capacity of General Manager and Corporate Executive Chef.
In 2001, I moved to Orlando, Florida. I was hired by Seaworld to open their newest full service restaurant called Sharks Underwater Grill. Spending two and a half years training and developing the chef’s at the restaurant I enjoyed seeing my staff become more passionate about the guest experience at the restaurant. In 2004, I was hired by Universal Studios where I enjoyed four years as a General Manager of three restaurants and two bars. At the same time I was hired to work at Universal Studios, I was invited to become an Associate Professor of Hospitality at Valencia College.
I have taught at the University of Phoenix, in their College of Business (Online). I also teach Restaurant Management and History and Culture of Wine at the University of Central Florida/Rosen School of Hospitality Management.
I am also an adjunct faculty member at Johnson & Wales University in the College of Online Education.
Additionally, I teach at the New England Culinary Institute in their online culinary/hospitality program.
I am currently a doctoral student at the University of Central Florida, Rosen College of Hospitality Management.
